One thing I love about Sunday is being able to batch cook for the week. It is much easier to eat healthy and not order out when you have prepared meals at your fingertips! Now I know, I know, this seems like a time consuming, stuck in the kitchen all day event. Wrong! Think of all the time you are saving when you have to either pack a lunch in the morning before work or spend tons o’ cash a week on take out. Try starting small…

The slow cooker is a great (and easy!) way to meal plan for the week. Finding recipes that can be diverse throughout the week; on wraps, over rice, in lettuce wraps or on a salad! If you are cooking for one or your whole family, this is such a good use of your time and $$!

Today I decided to used my new appliance ( a blender, food processor, juicer in one!) to create a staple I keep in my fridge… Peanut butter!

Super easy and delicious! Such a great source of protein that can be turned into a portable snack on celery, apples or baby carrots. Making your own is simple and allows you to avoid hydrogenated oils and preservatives that you would find in some supermarket brands. To make I divided out the peanuts into three cups. This way I could make three different flavors!

Simply Peanut Butter
1 cup dry roasted unsalted peanuts

Organic Honey Peanut Butter
1 cup dry roasted unsalted peanuts
1 tsp raw organic honey

Chocolate Coconut Peanut Butter
1 cup dry roasted unsalted peanuts
2 tbsp vegan carob chips
1 tbsp organic unsweetened coconut


Blend in a food processor until combined (1 minute of so). It should start to form a thick puree as the oils come out. And that’s it! Divide up in containers and enjoy! Because this pb doesn’t contain any preservatives or additives remember to refrigerate!

So get your week started out on the right foot by preparing some meals today. Even if it is something small like pb, you will be grateful when you have that snack prepared and on hand when hunger strikes :)
