Whew. That’s a mouth full.
This dense, protein-filled banana bread is great for on-the-go breakfasts! Just slice and freeze in separate bags for an easy, transportable snack or meal.
GF Banana Chip Protein Bread
2 ripe bananas, mashed
1/3 cup coconut oil
1 Happy Family Pouch (Banana, peach, mango… You can add ONE more banana instead, but I got this from HLS and really wanted to try it out!!)
1 cup organic light brown sugar
2 teaspoons bourbon vanilla extract
1 1/2 cups gluten-free flour (I used Brown Rice flour)
2 scoops of GF protein powder (I used Sun Warrior, but any kind will do)
1 teaspoon baking soda
2 1/2 teaspoons baking powder
1/4 teaspoon sea salt
1/2 teaspoon xanthan gum
1 rounded teaspoon cinnamon
1/2 bar of 70% dark chocolate, chopped
Preheat oven to 350.
In a mixing bowl combine all the wet ingredients. In a separate bowl mix all dry ingredients.
Mix together and fold in chopped dark chocolate.
Pour in a loaf pan and place in the oven for 25-30 min. I am working with a new (well, old really) oven so be sure to check the center of your loaf with a toothpick to make sure it’s done!
Let cool on a wire rack.
Slice and smear with cream cheese, PB or jam YUM!
