This year I’ve decided to smother myself in everything pumpkin.
Pumpkin protein pancakes.
Why NOT! I really wanted to recreate this recipe but use my crockpot (first time this season!). So I pulled a few different chili recipes and decided on the following ingredients:
Crockpot Autumn Chili
Cook time: 3-6hrs
modified recipe from Love & Olive Oil.
1lb Ground Turkey
1 med white onion
1 clove of garlic
1 can Red Kidney beans
1 can diced tomatoes
1 pint cherry tomatoes
1 cup chicken stock
2 cups pumpkin puree
1 large sweet potato
1 1/2 tbsp chili powder
1/2 tbsp cumin
3/4 tsp salt
1/2 tsp pepper
1/2 cup shredded fontina cheese (optional)
In a skillet on med heat, brown the ground turkey. Add in the chopped onions and garlic. Saute.
In the crockpot combine the rest of the ingredients (except the cheese). Drain some of the juices from the ground turkey/onion/garlic.
Add to the crockpot and let cook for 3hrs on High OR 6hrs on Low. I prefer low, since the flavors get more time to build and come together.
After the 3 or 6hrs, portion out the chili and sprinkle with the fontina cheese! Enjoy!
Ok, maybe this is the end of my pumpkin obsession.
